So, it's what? The seventh week of school. You wouldn't think that much time has past, unless maybe you've already had a couple midterms and realized how much material your professors have actually covered.
I hope for your sake you haven't begun to dread the dreary days of having to take the mountain-like climb up the escalator to Lenoir, because if you do take a hiatus from the dining hall that can be a lot of Mom and Pop's dough that you're throwin' out to the compost. (This year, I don't have a meal plan so my adventures to the dining halls are quite the spontaneous treat when my friends generously offer to swipe me in.)
If you are beginning to look for other options - be it the delicious 1.5.0. or Med Deli in the Bottom of Lenoir, or to just beg for other eateries when your friends ask to meet up at Rams for dinner - don't get down on yourself. With the help of my more experienced Lenoir/Rams-eating friends, I have come up with a list of five spice-up-your-dining-hall-meals/snacks... so, keep on hikin' that big hill - it can be fun when you get creative.
Basic Yogurt (typically vanilla) + Freshly ground PB
Creative additions: Walnuts/peanuts/etc. nuts from that odd nut dispenser next to the wrap station,
+ fresh fruit (i.e. bananas, strawberries, apples)
Veggies from the salad bar (i.e. spinach, mushrooms, peppers, etc.)
Toss on sandwich hot press til well-cooked!
*Scrape off any remainders with the spatula (so as not to anger the sandwich fanatics)

CDS Salsa + veggies, beans, cheese from salad bar
(Recipe 2. could easily be incorporated here)
*Ask the kind workers at the wrap station for a tortilla and you have yourself the makings of a delicious burrito wrap!
*Ingredients pictured here: salsa, kidney beans, black beans, mushrooms, white cheddar cheese + CHIPS
Quinoa + cucumbers + tomatoes + Garbanzo beans + walnuts + add your own dressing
*Optional yummy additions: peas, olives, beets
[sliced] Banana + peach + berries (from the waffle bar) + pineapple + any in-season fruits
*Delicious on a waffle and topped with yogurt!
Or else, stored in your tupperware and taken back to your dorm for a morning smoothie!
